Biko Rice: Where Coconut and Caramel Sweetness Meet Sticky Rice

Rich, sticky, and wonderfully comforting, Biko is a beloved sweet rice treat from the Philippines. The name is believed to come from the Hokkien Chinese term “bee koh,” which refers to sweetened glutinous rice—reflecting the influence of Chinese traders on Filipino cuisine over the centuries.

Made with glutinous rice, creamy coconut milk, and brown sugar, Biko is known for its soft, chewy texture and deep caramel-like sweetness. The coconut milk gives the dessert a rich, velvety taste, while the brown sugar adds warm, molasses-like notes that make every bite indulgent yet comforting.

Often served during gatherings and celebrations, Biko is simple in its ingredients but full of flavor—a sweet, sticky dessert that highlights the comforting combination of coconut and rice.

What You Need

For the Biko Rice (serves 4):

  • 350g Glutinous rice
  • 450g water 
  • 400g Coconut milk 
  • 200g brown sugar 
  • 3g salt 

Preparation

Prepare the thick coconut milk brown sugar mixture

  • Add 400g of coconut milk to a pan 
  • Simmer the coconut milk it reduces 
  • Add 200g brown sugar and 3g salt to the reduced milk 
  • Stir the brown sugar and coconut milk well 

Mixing the rice and coconut milk 

  • Add 350g glutinous rice into the coconut milk brown sugar mixture
  • Stir until the mixture is evenly combined with the rice 

Plating

  • Transfer the finished Biko Rice onto a banana leaf
  • Smooth the top and sides. 
  • Add roasted, grated coconut on top of the rice (as needed)

Biko is creamy, sweet, and packed with coconut goodness—a traditional Filipino treat that’s both comforting and indulgent.
