Amilla Maldives Celebrates Launch of “Kanethi Taste” Cookbook by Chef Naf

Chef Fathimath Nafha Ismail (Chef Naf), a chef de partie at Amilla Maldives, has launched her debut cookbook Kanethi Taste, a deeply personal collection that celebrates Maldivian home cooking. The book brings together recipes, family traditions, and stories from her culinary journey, highlighting the importance of local ingredients and the cultural heritage behind each dish.

“As I was a student living in another country, it was difficult for me to find my exact dishes because Maldivian cuisine is not widely known globally. For students from the Maldives studying abroad, this book can serve as an easy guide to help them bring a piece of home to them through food,” says Chef Naf.

The launch event, held at Amilla Maldives, was an intimate gathering attended by local media and Chef Naf’s family, adding a meaningful and emotional touch to the occasion. The programme began with refreshments and opening remarks, followed by the official unveiling of the cookbook. Guests were then taken on a guided garden walk, connecting them to the natural ingredients that influence Maldivian cuisine.

Chef Naf further brought her book to life through a live cooking demonstration at Barolo, showcasing key techniques and flavours featured in Kanethi Taste. This was followed by a relaxed, family-style lunch that reflected the communal dining traditions central to Maldivian culture. The event continued with a Q&A session and book signing before concluding.

Overall, Kanethi Taste offers readers an immersive journey through flavour, memory, and tradition, capturing the essence of Maldivian cuisine and making it accessible to both locals and visitors. The cookbook is now available at the resort.
